You can use any kind of wood you want to build your mews. If you want to see a weathering area, go to "Weathering area" under this section {raptor Facilities} and look on page 7. There are some pictures there that might give you some ideas.
Just make sure it is not rotting and free of mold, those are the main things to look out for when getting building stuff. Heres is a pic of a nice little weathering yard I found somewhere on the net.

Lets say, theoretically, i was planning on converting my garage into a mews. And lets also say, theoretically, that this said garage has several rotting boards on it. Would it be alright if i simply ripped the rotting boards off, and replaced them? or is it too risky that if a couple boards are rotting, more are that i wouldnt notice? would a disinfectant of some sort + changing the boards be enough? is my whole lawn ruined and no good for a mews cause of these rotting boards?
...theoretically...

"Theoretically", I would replace all the rotted wood and apply a fungicide. Allow the building to ventilate for at least a couple weeks before putting a bird in it. There is nothing wrong with your lawn because of the rotting wood. It sounds of concern over Asper. Read other threads and books to learn more about it. Basically it's a fungus that exist everywhere there is decaying organic matter. The spores drift when disturbed. Removal of decaying material and good ventilation are the best steps for prevention.
