I was thinking of using just grass/dirt because it is cheapest (just using it from the lawn) and doesn't harbor much mold. Wondering if this would be the 'ideal' flooring.

Aspergillosis spores proliferate in dirt, mulch, wood chips, sawdust, hay/straw, in moist and warm conditions.
Dirt is also abrasive, and will dull talons quckly if a bird is allowed to bate on it.
