I'm still a long way off from getting a falconry bird of any kind, let alone something as difficult as an owl, but the snowy holds a great deal of appeal for me. I trap for part of the year in very Northern Ontario and a snowy owl is likely one of the few birds I could take with me when working a trapline in -40 weather in January. I would have loads of places to fly a bird at ptarmigan (well, sharp-tailed grouse, ptarmigan are still a few hours north) and snowshoe hare, too.
I'd love to talk to someone who's flown one before--there seems to be a lot of conflicting information about them ranging from "you won't catch anything" to "ideal falconry birds."
Edit: Checked the regs to be doubly sure - snowy owls ARE legal falconry birds in Ontario.
